Description

This Freshly Milled Flour Sandwich Bread recipe yields a soft, fluffy loaf perfect for sandwiches. Made with hard white wheat flour and a blend of milk and butter, this bread is slightly sweetened with sugar or honey, providing a tender crumb and golden crust. The dough undergoes two rises for optimal texture and flavor, and it’s baked to a perfect golden brown in the oven.

Ingredients

Dry Ingredients

  • 3 cups hard white wheat flour (420 grams)
  • 2 tablespoons sugar (24 grams) or honey (42 grams)
  • 1 teaspoon salt (5 grams)
  • 2 ¼ teaspoons instant yeast or 1 packet (7 grams)

Wet Ingredients

  • ¾ cup water (177 grams)
  • ½ cup milk (122 grams)
  • ¼ cup melted butter (57 grams)

Instructions

  1. Kneading the Dough: Add all ingredients to a stand mixer fitted with a dough hook attachment. Knead the dough for about 15-20 minutes until it passes the windowpane test, indicating proper gluten development.
  2. First Rise: Cover the dough and let it rise for 1-2 hours or until it has doubled in size, creating a light and airy texture.
  3. Shaping the Dough: Gently press the dough out into a rectangle on a lightly floured surface, then roll it up tightly to create surface tension, which helps the bread hold its shape.
  4. Second Rise: Place the rolled dough into a greased bread pan, cover, and allow it to rise for another 30 minutes to an hour, until it nearly doubles in size again.
  5. Baking: Preheat your oven to 350°F (175°C). Bake the loaf for 35-45 minutes until golden brown on top and the internal temperature reaches 190°F (88°C). Let the bread cool before slicing.

Notes

  • Ensure the milk is at room temperature to help activate the yeast effectively.
  • You can substitute honey for sugar but adjust amount accordingly, as honey is sweeter.
  • The windowpane test is a great way to check if the dough is kneaded enough; it should stretch thin without tearing.
  • Allow the bread to cool completely before slicing to prevent a gummy crumb.
  • This bread freezes well; slice before freezing for convenient use.
