Ingredients
Peach Filling
- 5 cups fresh peaches, peeled and sliced
- 2 tablespoons cornstarch
- 3/4 cup brown sugar
- 1/2 cup water
- 2 tablespoons butter or margarine
- 2 tablespoons lemon juice
Cobbler Topping
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 3 tablespoons butter or margarine, melted
- 1 egg
- 5 tablespoons milk
Instructions
- Prepare the Peach Filling: In a saucepan on the stovetop, combine cornstarch, brown sugar, water, butter, and lemon juice. Stir the mixture continuously and cook over medium heat until it thickens. Add the peeled and sliced peaches to the mixture and cook briefly to incorporate flavors.
- Transfer to Baking Dish: Pour the thickened peach mixture into a 2-quart round baking dish that has been sprayed with cooking spray to prevent sticking.
- Make the Topping Batter: In a separate bowl, whisk together the flour, baking powder, salt, and sugar until combined. Add the melted butter, egg, and milk to the dry ingredients and whisk until the batter is smooth and uniform.
- Apply the Topping: Drop spoonfuls of the batter evenly over the hot peach filling. Optionally, sprinkle additional sugar over the batter for added sweetness and a slight crunch.
- Bake the Cobbler: Place the baking dish in a preheated oven at 400°F (204°C). Bake for 35 to 40 minutes, or until the topping is golden brown and cooked through, and the peach filling is bubbly.
- Cool and Serve: Remove from the oven and allow to cool slightly before serving. Enjoy warm for the best flavor and texture.
Notes
- For easier peeling of peaches, blanch them in boiling water for 30 seconds and then plunge into ice water.
- You can substitute fresh peaches with frozen peaches if fresh are unavailable; thaw and drain well before using.
- Sprinkling sugar over the topping before baking creates a slight caramelized crust.
- Serve with vanilla ice cream or whipped cream for an extra indulgent dessert.
- Use unsalted butter to better control salt level in the recipe.
