Instructions

  1. Arrange the Berries: Place the mixed berries evenly in an 8×4-inch loaf pan, distributing them so the colors and types of berries are well mixed throughout the pan.
  2. Bloom the Gelatin: Pour ½ cup of the grape juice into a large bowl. Sprinkle the unflavored gelatin packets evenly over the surface of the juice without stirring and let it sit undisturbed for 5 minutes. The gelatin will absorb the juice and become very thick and spongy, which is essential for proper gelling.
  3. Dissolve Sugar and Heat Remaining Juice: While the gelatin blooms, bring the remaining 1½ cups of grape juice and the sugar to a boil in a small saucepan. Whisk continuously until the sugar is completely dissolved. Then remove the pan from heat.
  4. Combine Gelatin and Warm Juice: Pour the hot grape juice and sugar mixture over the thickened gelatin in the bowl. Whisk thoroughly until the gelatin is fully dissolved and the mixture is smooth without any lumps.
  5. Pour Gelatin Over Berries and Chill: Carefully pour the warm gelatin mixture evenly over the berries in the loaf pan. Transfer the pan to the refrigerator and chill for 4 to 5 hours, or until the terrine is fully set and firm to the touch.
  6. Unmold the Terrine: To release the terrine, quickly run hot water along the sides of the loaf pan, tilting it to avoid getting water inside. Place an oblong serving platter upside down over the pan, then flip the two together so the terrine slides out onto the platter. If it sticks, gently run a blunt knife around the edges or briefly repeat the hot water step. Blot any excess liquid on the platter with a paper towel.
