French Vanilla Sugar (Sucre Vanillé) is a simple and aromatic sugar infused with real vanilla bean seeds, perfect for adding a natural vanilla flavor to baked goods, beverages, and desserts. This recipe blends granulated sugar with scraped vanilla bean seeds for a fragrant and gourmet vanilla sugar that can be stored and used anytime.

  • 6 cups granulated sugar (or 3 cups granulated sugar and 3 cups cane sugar for extra texture)


Instructions

  1. Measure the Sugar: Measure six cups of sugar into a medium-large bowl and set it aside.
  2. Slice the Vanilla Beans: Place one vanilla bean flat on a cutting board. Using a sharp knife, carefully slice down the center of the bean from the tip, cutting through only the top layer without piercing through the bottom.
  3. Scrape the Seeds: Gently pull the bean apart and, using the dull side of the knife, scrape the vanilla seeds out of the pod into the bowl with sugar. Repeat for all six beans.
  4. Mix the Sugar and Seeds: With clean hands, rub and run your fingers through the sugar to evenly distribute the vanilla seeds, breaking apart any clumps and discarding any fibrous pod bits.
  5. Store: Transfer the vanilla sugar into an airtight container and store it at room temperature. It will keep its flavor and freshness for several months.

Notes

  • For added texture and a slightly richer flavor, use half granulated sugar and half cane sugar.
