Instructions
- Roast the Potatoes: Preheat your oven to 400°F (200°C). Place the sweet potatoes on a baking sheet and pierce them several times with a fork all over. Roast the potatoes for 50 to 60 minutes until they are soft and can be easily pierced with a knife.
- Caramelize the Onions: While the potatoes roast, heat a large pot over low heat. Add 1 tablespoon of unsalted butter and the olive oil. Add the thinly sliced onions along with a pinch of salt. Cook slowly on the lowest heat, stirring occasionally, for about 50 to 60 minutes until the onions become deeply caramelized without burning. This slow process brings out a natural sweetness without added sugar.
- Prepare the Potatoes with Cheese: Once roasted, slice the sweet potatoes down the center lengthwise. Sprinkle each potato with the grated gruyere cheese and a sprinkling of dried thyme. Return the potatoes to the oven for 5 to 10 minutes so the cheese melts beautifully.
