- 4 sprigs fresh thyme

Instructions
- Preheat Oven: Preheat your oven to 300 degrees Fahrenheit to prepare for the braising process.
- Season the Chuck Roast: Pat the chuck roast dry and season both sides generously with Kosher salt and ground black pepper.
- Sear the Roast: Heat olive oil in a large Dutch oven over medium-high heat. Once hot, sear the chuck roast on both sides for about 5 minutes each until a golden brown crust forms. Remove from the pot and set aside.
