A savory and sweet twist on the classic grilled cheese sandwich, featuring caramelized French onions, crisp honeycrisp apples, melted fontina and gouda cheeses, and optional crispy pancetta, all layered between toasted sourdough bread and infused with fresh herbs.
Ingredients
Caramelized Onions
- 3 tablespoons salted butter
- 2 yellow onions, thinly sliced
- Kosher salt and black pepper, to taste
- 3/4 cup apple cider
- 1 tablespoon fresh thyme leaves
- 1 tablespoon chopped fresh sage
- 1 pinch crushed red pepper flakes
Other Ingredients
- 4 slices pancetta (optional)
- 8 slices sourdough bread
- 2 tablespoons extra virgin olive oil
- 1 1/2 cups shredded fontina cheese
- 1 1/2 cups shredded gouda or white cheddar cheese
- 1 honeycrisp apple, thinly sliced
- Additional 1/2 tablespoon butter (for finishing)
- 2 fresh sage leaves (for topping)
Instructions
- Caramelize the Onions: Melt 2 tablespoons of butter in a large skillet over medium-high heat. When the butter is melted and begins to shimmer, add the thinly sliced onions. Cook for 3 minutes until softened. Pour in half of the apple cider and season with kosher salt and black pepper. Continue cooking for another 5 minutes until most of the cider evaporates. Add the remaining cider and cook an additional 5 minutes until the onions turn golden and caramelized. Stir in fresh thyme leaves, chopped sage, and crushed red pepper flakes, cooking for another minute. Remove from heat and set aside.
- Cook the Pancetta: In a separate large skillet over medium heat, cook the pancetta slices until crisp, about 2 minutes per side. Remove from the skillet and set aside on paper towels to drain.
- Prepare the Bread and Layer the Sandwiches: Brush the outside of each slice of sourdough bread with extra virgin olive oil. On the inside of half the slices, evenly layer shredded fontina cheese, shredded gouda or white cheddar, caramelized onions, honeycrisp apple slices, and cooked pancetta if using. Top with the remaining bread slices, with the olive oil side facing out.
- Grill the Sandwiches: Place 1 or 2 sandwiches at a time into the skillet over medium heat. Cook each side for 3-5 minutes until the bread is golden and crisp and the cheese has melted. During the final minute of cooking, add 1/2 tablespoon butter and 2 sage leaves to the pan to infuse flavor and crisp the sage. Remove sandwiches and repeat with the remaining sandwiches.
