Instructions

  4. Mix the Ganache: Using a wooden spoon, stir the chocolate and cream mixture gently until you achieve a smooth, glossy, and homogeneous ganache.
  5. Add Flavorings: Stir in the vanilla extract and a pinch of sea salt (if using) to enhance the flavor, mixing thoroughly.
  6. Chill the Ganache: Cover the bowl tightly with plastic wrap directly on the surface of the ganache to prevent a skin from forming. Refrigerate for at least 3 hours or alternatively chill in the freezer for 1 hour until firm.
  7. Scoop the Truffles: Using an ice cream scoop or tablespoon, scoop out portions of the chilled ganache and place them spaced out on a baking sheet lined with parchment paper.
  8. Freeze Briefly: Place the baking sheet into the freezer for 10-15 minutes to firm up the scooped ganache.
