Ingredients
Vegetables & Seasoning
- 1 tablespoon olive oil
- ½ cup finely chopped onion
- 1 bell pepper, chopped
- 1 cup finely chopped broccoli
- ¼ teaspoon salt
- 1/8 teaspoon pepper
Egg & Dairy
- ½ teaspoon butter
- 8 large eggs
- 2 cups grated cheddar cheese (8 ounces)
Other
- ½ cup salsa (optional)
- 8 burrito-size whole wheat tortillas
Instructions
- Cook the vegetables: Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chopped onion, bell pepper, broccoli, salt, and pepper. Stir often and cook until the vegetables are softened but still vibrant, then remove from heat.
- Scramble the eggs: In a bowl, whisk the eggs until combined. Melt the butter in a medium nonstick skillet over medium heat. Pour in the eggs and cook, stirring frequently, until they are fully set and fluffy.
- Combine eggs and vegetables: Stir the scrambled eggs and optional salsa into the pot with the cooked vegetables, mixing thoroughly to combine all flavors evenly.
- Assemble the burritos: Lay each whole wheat tortilla flat. Place about ½ cup of the egg and vegetable mixture slightly below the center of each tortilla. Add ¼ cup of grated cheddar cheese on top. Fold the bottom of the tortilla up over the filling, then fold in the sides and continue rolling tightly from the bottom to form a burrito.
- Freeze for later: Allow the burritos to cool completely. Place them in a zip-top freezer bag, seal tightly, and store in the freezer for up to two months. To reheat, defrost overnight in the refrigerator or using a microwave defrost setting, then microwave on high for 30 seconds to 1 minute until heated through. Enjoy your convenient and tasty breakfast!
Notes
- The salsa is optional and can be omitted or substituted with your favorite hot sauce or fresh tomatoes.
- Use burrito-size tortillas to ensure easy wrapping and good filling-to-wrap ratio.
- You can customize the vegetables based on what you have on hand; spinach, mushrooms, or tomatoes work well too.
- If freezing individually, wrap each burrito in foil before placing in the freezer bag for extra protection against freezer burn.
- For reheating, microwaving is fastest, but you can also thaw and warm them in a skillet for a crispier tortilla.
