Description

Peanut Butter Sweet Potato Muffins are a delicious, flourless treat that combine creamy peanut butter with nutrient-packed sweet potatoes for a healthy and satisfying breakfast or snack. Made with just 8 simple ingredients, these gluten-free muffins are easy to prepare and perfect for anyone looking to enjoy a wholesome, naturally sweet baked good.

Ingredients

Wet Ingredients

  • 1 cup smooth unsweetened peanut butter (e.g., Teddie All Natural)
  • ½ cup cooked and mashed sweet potato
  • 3 eggs
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract

Dry Ingredients

  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon sea salt

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it to prevent sticking.
  2. Combine ingredients: In a food processor or mixing bowl, add the peanut butter, mashed sweet potato, eggs, baking soda, maple syrup or honey, vanilla extract, ground cinnamon, ground ginger, and sea salt. Blend or mix until the batter is smooth and all ingredients are fully incorporated.
  3. Portion the batter: Using a ¼ cup measure, evenly distribute the batter among the muffin tin holes, filling each about three-quarters full to allow for rising.
  4. Bake: Place the muffin tin in the preheated oven and bake for 16 to 18 minutes, or until a toothpick inserted into the center comes out clean and the internal temperature reaches 200°F (93°C).
  5. Cool and serve: Allow the muffins to cool in the pan for 15 to 20 minutes before transferring them to a wire rack. Enjoy warm or at room temperature.
  6. Storage: Store any leftovers in an airtight container in the refrigerator for up to one week or freeze for up to one month for longer storage.

Notes

  • To make these peanut butter muffins Paleo-friendly, substitute the peanut butter with almond butter.
  • You can replace the sweet potato with pumpkin puree or butternut squash for a different flavor while keeping it veggie-loaded.
