Ingredients

Chocolate Mixture

Meringue

  • 5 egg whites (from eggs separated), room temperature
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Coat a 9-inch springform pan thoroughly with baking spray to prevent sticking, then set aside for later use.
  2. Melt Chocolate and Butter: In a heat-safe bowl placed over a pot of simmering water (double boiler method), melt together the chopped semi-sweet chocolate and salted butter. Stir until completely smooth, then remove from heat and allow it to cool slightly while preparing the eggs.
  3. Separate Eggs: Carefully separate the 5 eggs, placing the yolks in one large mixing bowl and the whites in the bowl of a stand mixer fitted with a whisk attachment.
  4. Mix Egg Yolks with Chocolate: Using a hand mixer, beat the egg yolks until they become pale yellow and thickened, about 3 to 4 minutes. Gradually add the melted chocolate and butter mixture into the yolks, mixing until fully combined. Set this chocolate yolk mixture aside.
  5. Prepare Meringue: Add the cream of tartar to the egg whites in the stand mixer bowl. Beat on medium-high speed until the whites become foamy. Then, with the mixer running on medium-high, slowly add the granulated sugar in small increments. Continue beating until the egg whites form thick, glossy, stiff peaks.
  6. Fold Egg Whites into Chocolate Mixture: Gently fold the meringue into the chocolate and egg yolk mixture, taking care to maintain the light, airy texture of the whites to keep the batter fluffy.
  7. Bake the Cake: Pour the combined batter into the prepared springform pan. Place the pan on a larger baking sheet to catch any drips, then bake for 40 minutes, or until a toothpick inserted in the center comes out with moist crumbs. The cake will puff up and develop a crackly top. Avoid over-baking to maintain moistness.
  8. Cool the Cake: Remove the cake from the oven and allow it to cool in the pan placed on a wire rack. Cooling in the pan helps it set properly.
