Ingredients
Main Ingredients
- 2 boneless beef chuck roasts (2-1/2 pounds each)
- 1 envelope ranch salad dressing mix
- 1 envelope Italian salad dressing mix
- 1 envelope brown gravy mix
- 1/2 cup water
- Chopped fresh parsley, optional
Instructions
- Prepare the Roasts: Place the two boneless beef chuck roasts into a 5-quart slow cooker ensuring they lay flat for even cooking.
- Mix the Seasonings: In a small bowl, combine the ranch salad dressing mix, Italian salad dressing mix, and brown gravy mix. Stir in 1/2 cup water until well blended to create a flavorful sauce.
- Pour Over Meat: Evenly pour the mixed seasoning and gravy liquid over the chuck roasts inside the slow cooker.
- Cook Slowly: Cover the slow cooker with its lid and cook on the low setting for 7 to 8 hours, or until the meat is tender and easily shredded with a fork.
- Finish and Serve: If desired, sprinkle chopped fresh parsley over the pot roast before serving. You may also thicken the cooking juices in a saucepan to create gravy to accompany the dish.
Notes
- For a thicker gravy, remove the meat after cooking and simmer the juices with a slurry of cornstarch and water until desired thickness is achieved.
- Use fresh parsley as a garnish to add color and a mild herbal note.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
- Make sure to check that the beef chuck roasts fit comfortably in the slow cooker before beginning.
- Adjust cooking time according to your slow cooker model, as some may run hotter or cooler.
