  • 1 pound anelli (ring) pasta

Sauce

  • 2 tablespoons tomato paste
  • 28 ounces tomato sauce
  • ½ teaspoon salt


Instructions

  1. Cook the pasta: Cook the anelli pasta according to package directions until al dente. Reserve 1 cup of the pasta cooking water before draining to use for sauce consistency adjustment later.
  2. Sauté aromatics: In a nonstick skillet, melt 2 tablespoons of butter over medium heat. Add the grated onion and garlic, then stir to coat the aromatics evenly with butter. Cook for about 4 minutes until the onion softens and becomes translucent.
  3. Add tomato paste: Stir in 2 tablespoons of tomato paste with the onion and garlic mixture. Cook for 2 minutes to deepen the flavor and slightly caramelize the paste.
  4. Simmer tomato sauce: Pour in the 28 ounces of tomato sauce and bring the mixture to a gentle simmer. Lower the heat and allow it to simmer slowly for 10 minutes, partially covering the skillet to prevent splatters, allowing the flavors to meld.
  5. Combine pasta and sauce: Add the drained pasta back into the skillet along with the remaining 2 tablespoons of butter. Stir well to coat all the pasta in the sauce. Gradually add reserved pasta cooking water as needed to achieve a saucy consistency. Season to taste with ½ teaspoon of salt and stir to combine.
