Description

Fadge, also known as Irish Potato Bread, is a traditional rustic bread made with mashed potatoes and flour. This soft, slightly sticky dough is rolled out and cut into rounds before being baked until golden brown and lightly risen. Best enjoyed warm and fresh, Fadge is a comforting side perfect for any meal, especially alongside soups, stews, or breakfast dishes.

Ingredients

Ingredients

  • 2 cups mashed potatoes (cooled)
  • 1 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Butter, for greasing the baking sheet and serving

Instructions

  1. Gather Ingredients: Collect all necessary ingredients, including mashed potatoes, flour, baking powder, salt, and butter for greasing.
  2. Preheat Oven and Mix Dough: Preheat your oven to 400°F (205°C, Gas mark 6). In a large mixing bowl, combine the mashed potatoes with flour, baking powder, and salt. Mix until you form a light but sticky dough.
  3. Prepare Work Surface: Flour your work surface generously to prevent the dough from sticking as you handle it.
  4. Roll Out Dough: Roll out the dough gently to about 1/2 inch (1 centimeter) thickness, taking care not to tear it.
  5. Shape and Score: Cut the dough into saucer-sized rounds. Score each round with a cross to divide it visually into four wedges. Alternatively, cut individual cakes using a round biscuit or scone cutter to your preferred size.
  6. Grease Baking Sheet and Arrange Dough: Butter a baking sheet generously and carefully transfer the dough rounds to the sheet using a spatula to prevent tearing.
  7. Bake: Bake in the center of the oven for approximately 15 minutes, or until the rounds are golden brown and have risen slightly.
  8. Cool and Serve: Remove the rounds from the oven and place them on a cooling rack to cool slightly. Serve warm for the best taste and texture.

Notes

  • Ensure the mashed potatoes are cooled before mixing to avoid a tough dough.
  • Use plenty of flour when rolling out the dough to prevent it from sticking.
  • Handle the dough gently, as it is quite soft and sticky.
  • The scored cross on each round helps the bread cook evenly and makes serving easier.
  • Best eaten freshly baked and warm for optimal flavor and softness.
  • Can be served with butter, jam, or alongside savory dishes like stews or eggs.
