Description

This Einkorn Cornbread recipe offers a wholesome twist on a classic favorite, using ancient einkorn flour combined with classic cornmeal for a tender, flavorful bread. Enhanced with optional corn kernels and cheddar cheese, it’s a perfect side dish or snack that’s easy to prepare and baked in a cast iron skillet for a crispy crust and moist interior.

Ingredients

Dry Ingredients

  • 1 cup einkorn flour
  • 1 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar

Wet Ingredients

  • 1 cup milk
  • 1/3 cup melted butter (plus more for buttering the pan)
  • 2 eggs

Optional Ingredients

  • 1 cup canned or frozen corn
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 425°F (220°C). If you’re using a cast iron skillet, heat it gently over low heat on the stove to warm it before baking.
  2. Mix Dry Ingredients: In a small bowl, combine the einkorn flour, cornmeal, baking powder, salt, and sugar. Set this mixture aside.
  3. Combine Wet Ingredients: In a medium-sized bowl, whisk together the milk, eggs, and melted butter until well combined. Add the dry ingredients to the wet mixture and gently stir until just combined. If you’re including corn and cheddar cheese, fold them in gently at this stage, taking care not to overmix.
  4. Butter and Fill the Skillet: Butter your warmed cast iron skillet well to prevent sticking. Quickly pour the batter into the pan and transfer it immediately to the oven.
  5. Bake: Bake the cornbread for 20 to 25 minutes. Be careful not to overbake; a slightly underbaked cornbread ensures a tender crumb.
  6. Serve: Remove the cornbread from the oven and let it cool slightly. Serve it warm, preferably with an extra pat of butter spread on top for richness and flavor.

Notes

  • Using a cast iron skillet helps develop a crispy crust that contrasts nicely with the soft interior.
  • Do not overmix the batter to avoid a dense cornbread texture; mix until just combined.
  • The addition of corn and cheddar cheese is optional but adds texture and flavor.
  • Underbaking slightly results in a more moist and tender crumb.
  • Butter the pan liberally to prevent sticking and enhance flavor.
