Ingredients
For the Cake:
- 2 ½ cups all purpose flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon freshly grated nutmeg
- 1 ½ cups granulated sugar
- ½ cup vegetable oil
- 2 large eggs
- 2 large egg whites
- 1 tablespoon vanilla extract
- ½ teaspoon almond extract
- ⅓ cup plain Greek yogurt or sour cream
- 1 cup eggnog
For the Frosting:
- 8 ounces cream cheese, softened
- ½ cup unsalted butter
- 2 cups powdered sugar
- 2 tablespoons eggnog
- 1 teaspoon vanilla extract
- White sparkle sugar, for topping
- ¼ teaspoon freshly grated nutmeg
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350 degrees F. Spray a 9×13 inch baking sheet or dish with nonstick baking spray that contains flour to prevent sticking.
- Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, freshly grated nutmeg, and salt until well combined.
- Combine Wet Ingredients: In the bowl of an electric mixer, beat together the granulated sugar and vegetable oil until combined. Add the whole eggs and egg whites and continue beating. Then beat in the vanilla extract and almond extract followed by the Greek yogurt (or sour cream).
- Combine Batter: Add half of the dry ingredient mixture to the wet ingredients and beat to combine. Then add the eggnog and mix. Finally, add the remaining dry ingredients and beat until the batter is smooth and well incorporated.
- Bake the Cake: Pour the batter evenly into the prepared baking dish. Bake in the preheated oven for 25 to 32 minutes, or until the center is set and a toothpick or tester inserted into the center comes out clean. Remove from oven and allow the cake to cool completely before frosting.
- Prepare the Frosting: Beat the softened cream cheese and unsalted butter together until creamy and smooth. Gradually beat in the powdered sugar until fully combined. Add the eggnog and vanilla extract and beat until the frosting is light and fluffy.
- Frost and Decorate: Spread the eggnog frosting evenly over the cooled cake. Sprinkle with white sparkle sugar and freshly grated nutmeg on top for extra festive sparkle and flavor.
Notes
- Ensure the cake is fully cooled before frosting to prevent the frosting from melting.
- You can substitute sour cream for Greek yogurt if preferred.
- Freshly grated nutmeg in the cake and frosting enhances the traditional eggnog flavor.
- Use a nonstick spray with flour for easy release of the cake from the pan.
- For an alcohol-infused twist, you can add a tablespoon of rum or bourbon to the frosting.
