Description

This Egg Roll Noodle Bowl is a quick and hearty weeknight dinner featuring savory ground pork, fresh shredded cabbage and carrots, and tender rice noodles. The bowl is flavored with soy sauce, ginger, turmeric, and a hint of pepper, creating a delicious meal inspired by classic egg roll flavors but in a convenient one-skillet dish. Optional toppings like green onions and extra soy sauce add brightness and customization. Perfect for an anytime meal that can easily be made vegetarian or topped with a poached egg for extra protein.

Ingredients

Meat and Seasonings

  • 1 tablespoon sesame oil
  • 1/2 pound ground pork
  • 1 tablespoon soy sauce
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon pepper

Vegetables

  • 6 cups shredded cabbage (about 1 small head)
  • 2 large carrots, shredded (about 2 cups)
  • 3 green onions, thinly sliced

Noodles

  • 4 ounces rice noodles

Optional

  • Additional soy sauce, for serving

Instructions

  1. Brown the pork: Heat the sesame oil in a large cast-iron or heavy skillet over medium-high heat. Add the ground pork and cook, breaking it apart with a spoon, for 4-6 minutes until browned and cooked through.
  2. Season the meat: Stir in the soy sauce, ground ginger, salt, ground turmeric, and pepper. Mix well to evenly coat the pork with the seasonings.
  3. Cook the vegetables: Add the shredded cabbage and carrots to the skillet. Cook, stirring occasionally, for 4-6 minutes more or until the vegetables become tender but still have some crunch.
  4. Prepare the noodles: While the vegetables cook, prepare the rice noodles according to the package instructions. Drain them thoroughly once cooked.
  5. Combine noodles and pork mixture: Immediately add the drained noodles to the skillet with the pork and vegetable mixture. Toss everything together to combine well and heat through.
  6. Finish and serve: Sprinkle the sliced green onions over the top. Serve the noodle bowl warm, with additional soy sauce available on the side for extra flavor if desired.

Notes

  • Feel free to add extra vegetables such as bell peppers, snap peas, or mushrooms for more variety.
  • To make this dish vegetarian, substitute the ground pork with firm tofu or tempeh and use vegetarian soy sauce.
  • Topping with a poached or fried egg adds additional protein and richness.
  • If you prefer a spicier flavor, add a pinch of red pepper flakes or a drizzle of chili oil.
  • Use gluten-free soy sauce to keep this recipe gluten free.
