Description

These egg bites are a quick and delicious protein-packed snack or breakfast option, made creamy with cottage cheese and cheddar, perfectly seasoned, and baked to fluffy perfection. Customizable with your favorite add-ins like veggies or bacon, they’re ideal for meal prepping and enjoying throughout the week.

Ingredients

Egg Mixture

  • 8 large eggs
  • 1 cup cottage cheese (4% or low-fat)
  • ½ cup shredded sharp cheddar cheese
  • ¼ teaspoon fine salt
  • Pinch of black pepper

For Baking

  • Cooking spray
  • Fresh chives, roughly chopped (for garnish)

Instructions

  1. Prepare the Muffin Pan: Mist the cups of a silicone muffin pan lightly with cooking spray to prevent sticking. Preheat your oven to 350℉ (175℃) to ensure it’s ready for baking.
  2. Blend the Ingredients: In a blender, combine the eggs, cottage cheese, shredded cheddar, salt, and pepper. Blend until the mixture is smooth and uniform. Using a small blender like a Nutribullet works well for this step.
  3. Fill the Muffin Cups: Pour the blended egg mixture evenly into the muffin pan cups, filling each about halfway. Then sprinkle the chopped fresh chives on top. At this point, you can also add optional mix-ins such as diced vegetables or cooked bacon to each cup for extra flavor.
  4. Bake the Egg Bites: Place the muffin pan in the preheated oven and bake for 20-22 minutes. The egg bites should be slightly firm to the touch in the center when done and puffed up while baking.
  5. Cool and Serve: Remove the muffin pan from the oven. The egg bites will deflate slightly as they cool. Let them rest for a few minutes before carefully removing them from the pan to serve or store.
  6. Storage: Store any leftover egg bites in an airtight container in the refrigerator for up to 5 days, making them a perfect make-ahead snack or breakfast.

Notes

  • Customize your egg bites by adding cooked bacon, sautéed vegetables, or herbs before baking.
  • If you prefer a richer texture, full-fat cottage cheese works best.
  • Make sure to spray the muffin pan well to avoid sticking, especially if not using silicone.
  • These egg bites can be reheated quickly in the microwave for a convenient, nutritious meal.
