  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 Tbsp brown sugar
  • 1 tsp toasted sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 Tbsp cornstarch

Vegetables

  • 3/4 lb. broccoli
  • 2 carrots
  • 8 oz. mushrooms
  • 8 oz. sugar snap peas
  • 1 small onion
  • 1 red bell pepper

Other

  • 2 Tbsp cooking oil (vegetable or canola oil recommended)
  • 1 tsp sesame seeds


Instructions

  1. Prepare the Stir Fry Sauce: In a small bowl, combine soy sauce, water, brown sugar, toasted sesame oil, minced garlic, grated ginger, and cornstarch. Whisk thoroughly until the cornstarch is fully dissolved and set aside.
  2. Chop Vegetables: Cut broccoli, carrots, mushrooms, sugar snap peas, onion, and red bell pepper into similar sized pieces, according to your preference—slices, dices, or strips work well for even cooking.
  3. Cook Hard Vegetables: Heat cooking oil in a large skillet or wok over medium-high heat until very hot but not smoking. Add carrots and broccoli first, stirring frequently for about one minute until broccoli brightens in color.
  4. Add Mushrooms and Peas: Stir in mushrooms and sugar snap peas. Continue cooking and stirring for another one to two minutes until mushrooms begin to soften.
  5. Add Softer Vegetables: Add onion and red bell pepper to the skillet. Cook and stir just until the onion starts to soften, about one minute.
  6. Combine with Sauce: Give the prepared stir fry sauce a quick stir, then pour it over the vegetables. Stir constantly as the sauce comes to a simmer, thickening and turning glossy. Once the desired consistency and doneness is reached, remove from heat.
  7. Finish and Serve: Sprinkle sesame seeds on top of the stir fry for extra flavor and crunch. Serve hot immediately, either on its own or over steamed rice or noodles.
