- 4.5 ounces fresh cheese tortellini (130 grams)
- 12 ounces cherry or grape tomatoes (340 grams)
- 8 ounces Ciliegine mozzarella pearls, drained (226 grams)
- 24 fresh basil leaves, rolled
- Freshly-cracked black pepper, for garnish
Instructions
- Creamy Balsamic Dressing Preparation: In a small bowl, combine balsamic vinegar, Italian seasoning, grated garlic, mayonnaise, and freshly-grated parmesan. Whisk these ingredients together until well mixed.
- Emulsify Dressing: While whisking constantly, slowly drizzle the olive oil into the bowl to create a creamy, emulsified dressing. Season with kosher salt and freshly-cracked black pepper to taste.
- Cook Tortellini: Bring a large pot of heavily salted water to a rolling boil. Add the fresh cheese tortellini and cook according to package directions, usually 3-4 minutes, until al dente. Drain the tortellini and rinse with cool water to stop cooking.
