Ingredients
Meat and Seasoning
- 1 pound lean ground beef (or ground turkey)
- Salt and pepper, to taste
- 2 tablespoons taco seasoning
- ½ cup tomato sauce
- ½ cup water
Salad Components
- 8 cups chopped romaine lettuce
- 1 cup canned black beans (rinsed and drained)
- 1 cup canned corn (drained)
- 1 cup cherry or grape tomatoes (halved)
- ¾ cup shredded cheddar, Monterey jack, Mexican cheese or Colby jack cheese
- 1 large avocado (sliced)
Dressings and Toppings
- 1 cup salsa
- ¼ cup sour cream
- 4 ounces crumbled tortilla chips
Instructions
- Cook the Meat: Heat a large skillet over medium heat. Add the ground beef and season with salt and pepper. Cook the meat while breaking it up with a spoon until it is fully browned.
- Add Seasoning and Simmer: Stir in the taco seasoning, tomato sauce, and water. Reduce the heat to low and let it simmer, stirring occasionally for about 5 minutes or until the liquid mostly evaporates and the meat is thoroughly cooked.
- Assemble the Salad: Divide the chopped romaine lettuce, rinsed black beans, drained corn, halved tomatoes, shredded cheese, and sliced avocado evenly among four large plates or salad bowls.
- Add Toppings: Top each salad with the cooked, seasoned ground beef and spoon salsa over the top.
- Finish and Serve: Add a tablespoon of sour cream and sprinkle crumbled tortilla chips on each salad. Serve immediately for best texture and flavor.
Notes
- Ground turkey can be substituted for ground beef for a leaner option.
- Adjust the amount of taco seasoning based on your taste preference or salt sensitivity.
