Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the stuffed peppers.
  2. Sauté Aromatics: Heat 2 tablespoons of extra-virgin olive oil in a skillet over medium heat. Add the diced onion and sauté until it becomes soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Cook Ground Beef: Add the lean ground beef to the skillet with the onions and garlic. Cook, stirring frequently, until the beef is thoroughly browned and no longer pink, about 7-8 minutes.
  4. Combine Ingredients: Stir in the cooked brown rice, diced tomatoes with their juice, tomato paste, dried oregano, and paprika. Mix thoroughly to combine all ingredients. Season the mixture with kosher salt and freshly ground black pepper to taste, adjusting seasoning as preferred.
  5. Stuff Peppers: Remove the skillet from heat. Carefully stuff each of the 7 large bell peppers with the beef and rice mixture, packing it gently but firmly.
