Description

This Easy Shrimp Alfredo recipe combines succulent shrimp with a rich, creamy homemade Alfredo sauce tossed with perfectly cooked fettuccine. Ready in just 30 minutes, it’s a comforting and indulgent meal perfect for any weeknight or special occasion.

Ingredients

Shrimp and Pasta

  • 1 pound uncooked (31-40/pound size) shrimp, thawed and peeled (tails optional)
  • 8 ounces uncooked fettuccine

Sauce

  • 2 tablespoons butter
  • 4 ounces cream cheese (softened and cut into smaller pieces)
  • 3/4 cup heavy cream or whipping cream
  • 1/4 cup chicken broth
  • 2 large cloves garlic, minced
  • 1 cup freshly grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prep the Shrimp: If your shrimp are frozen, place them in a colander and run under cool water until fully thawed. Peel and devein if necessary, leaving tails on or off as preferred.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
  3. Make the Alfredo Sauce: In a medium skillet over medium heat, melt the butter. Add the cream cheese, heavy cream, chicken broth, and minced garlic. Stir continuously, using your spoon to help melt the cream cheese into the mixture until smooth, which should take a couple of minutes.
  4. Simmer the Sauce: Allow the sauce to gently bubble and reduce for about 5 minutes, stirring occasionally to prevent burning.
  5. Incorporate Parmesan Cheese: Stir freshly grated parmesan cheese into the sauce and cook for an additional minute to melt the cheese fully.
  6. Cook the Shrimp: Add the prepared shrimp to the skillet. Cook for 5 to 6 minutes, stirring occasionally, until shrimp turn pink and are fully cooked through.
  7. Season and Combine: Taste the sauce and add salt and pepper as needed. Toss the cooked fettuccine with the shrimp Alfredo sauce to coat evenly.
  8. Serve: Serve the shrimp Alfredo hot for a creamy and flavorful meal.

Notes

  • Use freshly grated parmesan for the best flavor and melting quality.
  • Do not overcook the shrimp; they cook quickly and become rubbery if left too long.
  • You can substitute chicken broth with vegetable broth for a lighter sauce.
  • For a lower-fat version, use half-and-half instead of heavy cream, but sauce will be less rich.
  • Make sure to stir sauce continuously when melting cream cheese to avoid clumping.
