Ingredients

Sausage & Vegetables

  • 1 pkg. Eckrich Smoked Sausage
  • 1 Tbsp. butter
  • 1/2 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 1/4 Cup mushrooms, chopped
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Cup spinach, roughly chopped
  • 1 Cup cherry tomatoes, halved

Egg Mixture

  • 12 eggs
  • 1/3 Cup milk
  • 3/4 Cup mozzarella cheese, shredded


Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375 degrees Fahrenheit and lightly spray a 9×13 inch casserole dish to prevent sticking.
  2. Chop Vegetables: Chop all the vegetables—onion, red and green bell peppers, mushrooms, spinach, and cherry tomatoes—into bite-sized pieces for even cooking and easy eating.
  3. Sauté Vegetables and Sausage: Heat a large skillet over medium heat and add the butter. Once melted, add the chopped onions and bell peppers, cooking them for about 3 minutes until they soften. Then add the smoked sausage, mushrooms, salt, and pepper, cooking everything together for an additional 3 minutes. Remove from heat and gently fold in the spinach and cherry tomatoes.
  4. Assemble Casserole: Transfer the sautéed sausage and vegetable mixture into the prepared casserole dish, spreading it evenly.
  5. Prepare Egg Mixture: In a separate bowl, whisk together the eggs and milk until combined. You can also add some of the mozzarella cheese into this mixture if you prefer extra cheesy flavor throughout.
  6. Combine and Top: Pour the egg mixture evenly over the sausage and vegetables in the casserole dish. Gently stir to evenly distribute the eggs. Then sprinkle the remaining shredded mozzarella cheese evenly on top.
  7. Bake: Place the casserole dish in the oven and bake for 45 minutes, or until the eggs are set and the cheese is melted and slightly golden.
  8. Serve: Remove from oven and allow to cool slightly. Serve warm for a comforting and delicious breakfast or brunch.

  • This casserole can be prepared the night before up to the point before adding spinach and tomatoes. Store the sautéed mixture in the fridge and add fresh spinach and tomatoes before baking.
