Description
This Easy Pumpkin Pie recipe is a simple and classic dessert perfect for the fall season and holidays. Made with a store-bought refrigerated pie crust and a creamy pumpkin filling spiced with pumpkin pie spice, this pie requires minimal prep time but yields a rich, flavorful treat that sets beautifully after baking.
Ingredients
Pie Crust
- 1 (9-inch) refrigerated pie crust (store-bought)
Filling
- 1 (15 oz) can pumpkin puree (not pie filling)
- 1 (14 oz) can sweetened condensed milk
- 2 large eggs
- 2 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
Instructions
- Preheat Oven: Set the oven rack to the lowest position and preheat the oven to 425°F (218°C).
- Prepare Pie Crust: Thaw the refrigerated pie crust according to package directions. Unroll it and fit it into a 9-inch pie dish. If desired, fold the edges under slightly and press between fingertips to create a decorative wavy edge.
- Make Filling: In a mixing bowl, whisk together the pumpkin puree, sweetened condensed milk (including any excess from the can), eggs, pumpkin pie spice, and salt until the mixture is smooth and well combined.
- Fill Pie Crust: Pour the pumpkin filling into the prepared pie crust and gently wiggle the pie dish to level the filling. Place the pie on a baking sheet. To prevent the crust edges from over-browning, optionally cover them loosely with a ring of aluminum foil.
- Bake at High Temperature: Transfer the pie on the baking sheet to the oven’s lowest rack and bake at 425°F for 15 minutes.
- Reduce Heat and Continue Baking: After 15 minutes, reduce the oven temperature to 350°F (177°C) without opening the oven door. Continue baking the pie until the filling is nearly set and no longer jiggles when the dish is gently moved, about 35 to 40 minutes more.
- Cool the Pie: Remove the pie from the oven and transfer it to a wire rack. Allow it to cool for at least 2 hours before slicing. For a chilled option, cool at room temperature for 1 hour and then refrigerate for 2 hours.
Notes
- Use canned pumpkin puree, not pumpkin pie filling, for the best texture and flavor.
- Cover the edges of the pie crust with foil to prevent burning if they brown too quickly.
- Letting the pie cool completely ensures it slices cleanly without falling apart.
- Chilling the pie before serving enhances the flavor and makes it easier to cut nice slices.
- For a decorative crust edge, gently press the crust between your fingertips or use a fork for a crimped border.
