Ingredients
Soup Base
- 2 tablespoons butter
- 1 large yellow onion, diced
- 2 large carrots, peeled and diced
- 1 stalk celery, diced
- 2 cloves garlic, minced
Seasoning & Thickener
- 1/4 cup all-purpose flour (or gluten-free flour)
- 1/2 teaspoon smoked paprika
- ½ teaspoon dried thyme
Soup Liquids & Main Ingredient
- 4 cups vegetable broth
- 16 oz mini frozen cheese pierogi
- ½ cup evaporated milk
- Salt & pepper to taste
Instructions
- Sauté vegetables: In a large pot over medium-low heat, melt the butter and add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables soften, about 8 minutes.
- Add spices and garlic: Stir in the minced garlic, smoked paprika, and dried thyme. Continue cooking for 2 minutes to enhance the aroma and flavors of the spices.
- Incorporate flour: Sprinkle the flour over the vegetables and stir continuously for 1 minute to cook out the raw flour taste and help thicken the soup.
- Add broth and bring to boil: Slowly pour in the vegetable broth while stirring constantly to avoid lumps. Increase heat and bring the mixture to a gentle boil.
- Cook pierogi: Add the frozen mini cheese pierogi to the boiling soup and cook for 3 to 4 minutes, or until the pierogi are tender and heated through.
- Finish soup: Remove the pot from heat and stir in the evaporated milk. Season with salt and pepper to taste before serving.
