Ingredients

Ribs

  • 2.75-3 pounds baby back ribs
  • 1 tablespoon olive or avocado oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon table salt
  • 1 teaspoon ground pepper
  • ½ teaspoon garlic powder

Chipotle BBQ Sauce

  • ⅔ cups ketchup
  • ¼ cup apple cider vinegar
  • ¼ cup Worcestershire sauce
  • 3 tablespoons brown sugar
  • 2-3 chipotle peppers in adobo sauce (use 2 for a milder kick)
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder


Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 275°F (135°C) and line a large baking sheet with foil to catch drippings and make cleanup easier.
  2. Remove membrane and trim ribs: Slide a small knife under the thin white membrane on the back of the ribs and peel it off to improve tenderness. Trim any excess fat if desired and cut ribs into 2–4 sections for easier handling.
  3. Dry and oil ribs: Pat the ribs dry with a paper towel to help the seasoning stick, then brush the meaty side with olive or avocado oil to add moisture and promote browning.
  4. Season ribs: In a small bowl, combine 2 teaspoons smoked paprika, salt, pepper, and ½ teaspoon garlic powder. Sprinkle this spice mixture evenly over the oiled ribs on the meaty side.
  5. Arrange and cover ribs: Place the ribs meaty side up on the foil-lined baking sheet and cover tightly with foil to lock in moisture during slow cooking.
  6. Bake low and slow: Bake the covered ribs at 275°F for 2 hours. Test tenderness by piercing with a sharp knife or gently bending the ribs; the meat should pull away from the bone easily. If not tender, bake an additional 20–30 minutes.
  7. Prepare chipotle BBQ sauce: While ribs bake, blend ketchup, apple cider vinegar, Worcestershire sauce, brown sugar, chipotle peppers, smoked paprika, and garlic powder in a blender until smooth and well combined.
  8. Increase oven temperature: Remove ribs from the oven and increase the oven heat to 325°F (163°C) in preparation for glazing.

  10. Second glaze and broil: Brush the ribs again with another ¼ cup of BBQ sauce, then set the oven to broil. Broil the ribs for 3–4 minutes to create a sticky, caramelized finish.
