Ingredients

Dough

  • 3 1/2 cups (17.5 oz) to 4 cups all-purpose flour (scooped and leveled)
  • 1/4 cup granulated sugar
  • 1 Tbsp rapid rise yeast
  • 1 1/2 tsp salt
  • 3/4 cup cool water
  • 3/4 cup milk
  • 4 Tbsp unsalted butter, diced into 1 Tbsp pieces, plus more for tops
  • 1 1/2 tsp lemon juice


Instructions

  1. Preheat and combine dry ingredients: Preheat your oven to 180°F. In the bowl of an electric stand mixer, whisk together 3 1/2 cups of flour, granulated sugar, rapid rise yeast, and salt until well mixed.
  2. Warm wet ingredients: In a medium bowl, add water, milk, and diced butter. Heat in the microwave on high for about 1 minute and 15 seconds until the mixture reaches 120°F on a thermometer. Stir to partially melt and soften the butter.
  3. Mix wet and dry: Pour the warmed milk mixture and lemon juice into the dry ingredients in the mixer bowl.
  4. Knead the dough: Using the hook attachment, start mixing on low speed then gradually increase to medium-low. Knead the dough for about 3 minutes until it is smooth and elastic, adding additional flour as needed to keep the dough lightly sticky but manageable.
  5. Initial rest: Cover the bowl tightly with plastic wrap and let the dough rest for 5 minutes. Meanwhile, butter a 13 by 9-inch baking dish.
  6. Shape the dough: Turn the dough out onto a lightly floured surface and shape it into a 9 by 9-inch square. Cut into 16 equal portions.
  7. Form rolls: Roll the dough portions into 15 evenly sized balls, using extras from the 16th portion to even out any smaller pieces. Place the dough balls into the prepared baking dish.
  8. Proof in oven: Dampen your hands with water and gently brush the tops of the dough balls to prevent drying. Place the baking dish in the turned-off preheated oven and let the rolls rise for 20 minutes without opening the door.
  9. Preheat oven to bake: Remove the rolls and preheat the oven to 375°F. Let the rolls rest on the counter while the oven heats.
  10. Bake the rolls: Bake the rolls in the preheated oven for 14 to 16 minutes until golden brown on top.
  11. Finish and serve: Immediately after baking, rub the tops of the rolls with a stick of butter to coat them lightly. Serve warm. Store any leftovers in an airtight container and rewarm in the microwave for best results.
