- 2 cups cooked rice (optional for serving)

Instructions
- Preheat the oven: Set your oven to 350ºF (175ºC) to prepare for baking the fish.
- Prepare the fish: Place the raw halibut, thawed if frozen, into a baking dish. Drizzle with olive oil and dry white wine or alternative liquid, then season with salt, pepper, crushed dried oregano, and paprika.
- Add vegetables and olives: Layer the sliced red onions, cherry tomatoes, and mixed olives evenly over the fish to infuse flavors during baking.
- Bake the fish: Place the baking dish in the oven and bake for 20 to 25 minutes, or until the fish is fully cooked and flakes easily with a fork.
- Serve: Serve the baked fish over cooked rice if desired, spooning the wine-infused sauce from the pan over the top. Garnish with chopped cilantro if using for an added fresh touch.
