Description
This Easy Life Changing Instant Pot Beef Stew is a hearty and comforting dish perfect for busy weeknights. Tender chunks of chuck roast are cooked with onions, celery, and carrots in a flavorful tomato juice broth, thickened with tapioca for the perfect stew consistency. The Instant Pot cooking method makes it fast and convenient, delivering deep, rich flavors in just 50 minutes.
Ingredients
Beef and Vegetables
- 2 lbs. beef chuck roast, fat trimmed and cut into 1-2 inch chunks
- 1 medium onion, sliced thinly
- 2 stalks celery, sliced diagonally into thick pieces
- 6 carrots, sliced diagonally into thick pieces
Other Ingredients
- 2 tablespoons small tapioca
- 1/2 cup tomato juice
- 2 teaspoons kosher salt
- 1 tablespoon granulated sugar
Instructions
- Add Beef and Vegetables: Place the beef chunks, sliced onion, celery, and carrots into the Instant Pot, arranging them evenly to ensure even cooking.
- Add Other Ingredients: Sprinkle the small tapioca pearls, kosher salt, and granulated sugar evenly over the beef and vegetables. Pour the tomato juice on top to provide liquid for pressure cooking.
- Cook in the Instant Pot: Secure the Instant Pot lid and set the valve to sealing position. Select the stew or meat setting and cook on high pressure for 35 minutes, allowing the beef to become tender and the flavors to meld.
- Finish and Release Pressure: Once the cooking cycle ends, allow the Instant Pot to naturally release pressure for about 10 minutes. Then carefully release any remaining steam. For an enhanced flavor and color, optionally transfer the stew to an oven-safe dish and brown in the oven briefly as suggested in the notes.
Notes
- Small tapioca acts as a natural thickener for the stew, adding a smooth, hearty texture without overpowering the flavors.
- If you prefer a thicker stew, you can finish by transferring it to a baking dish and browning it in a 400°F (200°C) oven for 10-15 minutes, stirring occasionally.
- Letting the stew sit for 10 minutes after cooking allows the flavors to fully develop and the beef to relax, improving tenderness.
- This recipe can be doubled or halved easily depending on your serving needs.
