Description

This Easy Homemade Strawberry Salad Dressing is a fresh, vibrant dressing made with ripe strawberries, tangy white wine vinegar, sweet maple syrup, and a touch of creamy mayonnaise. Perfectly emulsified with extra virgin olive oil and accented with optional poppy seeds, this dressing adds a delightful fruity twist to salads in just 10 minutes.

Ingredients

Dressing Ingredients

  • 1 cup sliced strawberries
  • ¼ cup white wine vinegar
  • 2 tablespoons maple syrup
  • 2 teaspoons mayonnaise
  • ¼ teaspoon salt
  • ⅓ cup extra virgin olive oil (streamed in at the end)
  • 1 teaspoon poppy seeds (optional, stirred in the final dressing)

Instructions

  1. Blend Strawberries: Add the sliced strawberries to the bowl of a food processor and blend until mostly smooth, creating a fruity base for the dressing.
  2. Add and Blend Other Ingredients: Add white wine vinegar, maple syrup, mayonnaise, and salt to the processor. Blend again until all ingredients are well combined, scraping down the sides as needed to ensure even mixing.
  3. Emulsify with Olive Oil: With the processor running on low speed, slowly stream in the extra virgin olive oil until the dressing becomes smooth and fully emulsified.
  4. Finish and Serve: Transfer the dressing to a jar or dressing bottle, stir in the poppy seeds if using, and enjoy drizzling over your favorite salads.

Notes

  • You can adjust the sweetness by adding more or less maple syrup according to your taste.
  • If you prefer a thinner consistency, add a tablespoon of water or more vinegar while blending.
  • For a tangier flavor, substitute white wine vinegar with apple cider vinegar or balsamic vinegar.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days; stir well before each use.
  • Omitting mayonnaise will make the dressing dairy-free, but lose some creaminess.
