Apple Filling

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and position the rack in the middle. Grease an 8-inch square or 2-quart baking dish with butter to prevent sticking.
  2. Make the Apple Filling: In a large bowl, combine the peeled and sliced apples with granulated sugar, dark brown sugar, flour, and cinnamon. Toss well until the apples are evenly coated. Transfer this mixture into the prepared dish, spreading it into an even layer. Dot the top with the 2 tablespoons of butter pieces.
  3. Prepare the Biscuit Topping: In a separate medium bowl, whisk together the flour, 6 tablespoons of sugar, baking powder, baking soda, and salt. Add the cold butter chunks and, using your fingers or a pastry cutter, mash or cut the butter into the dry ingredients until the mixture resembles coarse crumbs with pea-sized butter bits. Add the buttermilk and stir gently just until combined; lumps are expected—avoid overmixing.
  4. Assemble the Cobbler: Using a large spoon, dollop 8 to 10 spoonfuls of the biscuit batter evenly over the apple filling, allowing some of the filling to peek through. Sprinkle the remaining tablespoon of sugar over the biscuit topping.
