Ingredients

Egg White Mixture

  • 100g egg whites (about 34 large egg whites)
  • 1/4 teaspoon (1g) cream of tartar
  • 1/2 teaspoon vanilla, almond, coconut extract, or other (optional)
  • 80g superfine sugar (caster sugar)
  • 12 drops gel food coloring (optional)

Dry Ingredients

  • 125g almond flour
  • 125g confectioners’ sugar

Filling

  • Desired macaron filling of choice (e.g., buttercream, ganache, jam)


Instructions

  1. Prepare Egg Whites: Wipe a large glass or metal mixing bowl with lemon juice or vinegar to clean. Add egg whites, cover, and refrigerate for 24 hours. Bring to room temperature before using.
  2. Prepare Baking Sheets: Line 3 large baking sheets with silicone baking mats or parchment paper and set aside.
  3. Beat Egg Whites: Add cream of tartar and extract (if using) to egg whites. Beat on medium speed with a mixer until soft peaks form. Gradually add superfine sugar in thirds, beating on medium-high speed until stiff, glossy peaks develop. If using, gently fold in gel food coloring.
  4. Sift Dry Ingredients: Sift almond flour and confectioners’ sugar together into a large bowl, pressing any large bits through the sieve with a spoon to ensure a smooth mixture.
  5. Combine Mixtures: Fold beaten egg whites into the almond flour-sugar mixture in three additions, folding gently each time until combined. Continue folding until batter thins to the consistency of honey, performing the figure-8 test: batter should merge within 10 seconds. Adjust folding to avoid overmixing or undermixing.
  6. Fill Piping Bag: Transfer the macaron batter into a piping bag fitted with a medium round tip (Wilton 12, Wilton 1A, or Ateco 806). Be cautious as the batter is drippy.
  7. Pipe Macarons: Pipe 1.5 to 2 inch rounds onto prepared baking sheets spaced 1-2 inches apart. Tap baking sheets gently on the counter to release air bubbles and pop remaining bubbles with a toothpick.
  8. Dry Macarons: Let the piped batter rest at room temperature for 30-60 minutes until a skin forms and the tops are no longer sticky.
  9. Preheat Oven: Set oven to 325°F (163°C) while macarons dry.
  10. Bake: Bake macarons for 13 minutes. Check doneness by lightly touching the top; if stable, they are done. If wobbly, bake an additional 1-2 minutes.
  11. Cool Shells: Cool shells on baking sheets for 15 minutes, then transfer to a wire rack to cool completely to prevent sticking.
  12. Fill and Assemble: Once cooled, fill shells with chosen filling and sandwich together using a knife or piping bag.
  13. Optional Maturation: Refrigerate assembled macarons for 12-24 hours to allow flavors to mature, then bring to room temperature before serving. Alternatively, serve immediately.
  14. Storage: Store leftover macarons covered in the refrigerator for up to 5 days.
