Chicken
- 6 bone-in, skin-on chicken breasts

- 1 tsp olive oil

- Remaining sage from the 1 1/2 tbsp used in chicken preparation
Instructions
- Preheat and prepare chicken: Preheat your oven to 300 degrees Fahrenheit. Allow the chicken breasts to sit at room temperature for 20 minutes as the oven heats to ensure even cooking.
- Make sage butter and apply to chicken: In a small bowl, mix the softened butter with 1 tablespoon of the freshly chopped sage. Carefully loosen the skin from the chicken breasts and use your hands to spread half of the sage butter under the skin. Spread the remaining butter evenly over the outside of the chicken pieces.
- Toss potatoes with sage and oil: In a mixing bowl, combine the cut potatoes with the remaining sage, olive oil, and a generous amount of kosher salt. Toss well to ensure all pieces are evenly coated.
