Ingredients
Fruit
- 500 grams (3 and 1/2 cups) fresh strawberries, plus extra for serving
- 125 grams (1 cup) fresh raspberries, plus extra for serving
- 1 and 1/2 tablespoons caster sugar or granulated sugar
Cream Mixture
- 360 ml (1 and 1/2 cups) full fat thickened or heavy cream, suitable for whipping
- 120 ml (1/2 cup) full fat mascarpone cheese
Meringue
- 70 grams (2 cups) store bought meringues
Instructions
- Prepare the fruit: Quarter and hull the strawberries, then place them in a large bowl. Add the raspberries and sprinkle the sugar over the fruit. Gently stir to coat all the fruit evenly, then set aside to allow the sugar to macerate the berries.
- Whip the cream: In a separate bowl, use an electric mixer to whip the full fat cream until soft peaks form. Carefully fold in the mascarpone cheese until the mixture is smooth and creamy.
- Combine ingredients: Crush the store-bought meringues by hand into bite-sized pieces. Gently fold the crushed meringues into the bowl with the fruit and whipped cream mixture, taking care not to break the meringue too much.
- Serve: Spoon the Eton Mess into individual serving bowls and top with extra fresh strawberries and raspberries for garnish. Serve immediately for best texture.
