- 1 box (11 oz) NILLA Wafers
Filling
- 4 oz cream cheese, room temperature
- 1 box (3.4 oz) instant vanilla pudding mix
- 1 cup milk
Chocolate Topping
- 1/2 cup semi-sweet chocolate chips
- 1/2 tsp vegetable oil
Instructions
- Prepare Cream Cheese: In a small bowl, beat the cream cheese using an electric mixer until it becomes smooth and creamy. Set it aside for later use.
- Make Pudding Mixture: In a separate bowl, whisk together the instant vanilla pudding mix and milk until fully blended. Add the smooth cream cheese to this mixture and continue mixing with a whisk or mixer until well combined and smooth. Chill this mixture in the refrigerator for a few minutes to help it set.
- Assemble Cookies: Spoon 1 to 2 teaspoons of the pudding filling onto the flat side of one NILLA wafer. Top with another wafer and gently press down to form a sandwich. If the filling feels too soft, place the assembled cookies in the freezer for about 10 minutes to firm up.
- Melt Chocolate: In a small bowl, combine the semi-sweet chocolate chips and vegetable oil. Microwave the mixture in 30-second intervals, stirring thoroughly after each, until the chocolate is smooth and shiny.
- Dip Cookies: Hold each cookie sandwich by the bottom wafer and dip the top side into the melted chocolate. Let excess chocolate drip off, then gently scrape the edge of the bowl to remove extra chocolate from the cookie top.
- Set and Serve: Place the dipped cookies in the refrigerator again to allow the chocolate to set properly. After setting, serve the cookies at room temperature or freeze them for future enjoyment.
