Ingredients
Fruit Filling
- 3 large honey crisp apples, peeled and chopped
- 1 1/2 cups cranberries (fresh or frozen)
- 1/2 cup brown sugar
- 3 tbsp corn starch
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp vanilla extract
Crisp Topping
- 2/3 cup flour
- 3/4 cup oats
- 2/3 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup butter (cold, cut into cubes)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready when your crisp is assembled.
- Prepare Fruit Filling: Peel and chop the apples. In a large bowl, combine the chopped apples, cranberries, 1/2 cup brown sugar, 1 tsp cinnamon, corn starch, nutmeg, and 1 tsp vanilla extract. Mix thoroughly, then pour the mixture into a 9-inch pie plate or an 8×8-inch square baking pan.
- Make Crisp Topping: In a separate large bowl, mix the flour, oats, 2/3 cup brown sugar, 1/2 tsp cinnamon, and salt. Add the cold, cubed butter and 1 tsp vanilla extract. Use a pastry cutter or your clean hands to blend everything until the mixture becomes crumbly and pea-sized in texture.
- Assemble and Bake: Evenly sprinkle the crisp topping over the fruit filling in the baking dish. Place the dish on a baking sheet to catch any drips and bake in the oven for 55 minutes until the topping is golden brown and the filling is bubbling.
- Rest and Serve: Let the cranberry apple crisp rest for 5-10 minutes to allow the filling to set. Serve warm, ideally with a scoop of vanilla ice cream or whipped cream for an extra treat.
Notes
- Using cold butter in the topping helps create a crumbly texture with small pea-like pieces.
- You can substitute honey crisp apples with Granny Smith for a tarter flavor or Fuji for sweeter taste.
- Fresh or frozen cranberries both work well; no need to thaw frozen cranberries before mixing.
- For added crunch, sprinkle chopped nuts like pecans or walnuts on top before baking.
- Store leftovers covered in the refrigerator for up to 3 days; reheat before serving.
