Ingredients

Ganache

  • 285g / 10 oz dark chocolate melts (chocolate chips, or chocolate block coarsely chopped)
  • 2 tbsp (30g) unsalted butter
  • 1/2 cup (125ml) full-fat cream (not low fat, not whipped)

Coatings

  • 1/2 cup desiccated coconut
  • 1/4 cup unsweetened cocoa powder (Dutch Processed is darker, looks posh)
  • 1/2 cup crushed peanuts (small pieces to stick well)
  • 1/3 cup sprinkles or similar decorative toppings
  • 1/4 cup icing sugar / powdered sugar


Instructions

  1. Heat Chocolate Mixture: Place chocolate, cream, and butter in a microwave proof bowl. Microwave on high in 4 bursts of 30 seconds each, stirring in between to prevent overheating.
  2. Let Ganache Melt: Cover the bowl with a plate and let it stand for 5 minutes. Stir until the chocolate is fully melted and smooth, forming a rich ganache.
  3. Chill Ganache: Refrigerate the ganache for 6 hours to allow it to firm up properly. Avoid using the freezer to maintain the best texture.
  4. Chill Serving Plate: Place a dinner plate or tray in the refrigerator for rolling and resting the truffles.
  5. Prepare Coatings: Put cocoa powder or other coating choices into small bowls or plates for easy rolling.
  6. Check Ganache Consistency: Remove the ganache from the fridge. It should be firm yet pliable, softer than cold butter but firmer than peanut butter.
  7. Prepare Cooling Surface: Place an ice pack or bag of frozen peas on the bench and cover with paper towels to cool your hands during rolling.
  8. Roll Truffle Balls: Using a tablespoon measure, scoop the ganache and then use a teaspoon to transfer it into your hands. Roll into smooth balls, placing each on the chilled plate. Chill your hands on the ice pack as needed to prevent melting.
