Description
This easy chocolate brownies recipe yields rich, fudgy, and deeply chocolatey brownies with a perfectly moist texture. Made with melted dark chocolate and butter, brown sugar, eggs, flour, and cocoa powder, these brownies bake up tender with a slightly gooey center and a crackly top. Optional chopped dark chocolate chunks add bursts of melty chocolate. Ideal for a satisfying dessert or chocolate fix at home, they’re simple to prepare and bake in under 35 minutes.
Ingredients
Main Ingredients
- 200g (14 tbsp) unsalted butter (1 3/4 US sticks)
- 1 1/4 cups dark chocolate chips or melts/discs (US: semi-sweet chocolate)
- 1 cup loosely packed brown sugar
- 3 large eggs, lightly beaten (fridge cold or room temp is fine)
- 1 tsp vanilla extract
- 1/2 cup plain flour (all-purpose flour)
- 1/4 cup cocoa powder, sifted
- Pinch of salt
Optional Ingredients
- 180g (6 oz or 1 cup) dark chocolate chips or chopped dark chocolate bar (US: semi-sweet chocolate)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 180°C/350°F (160°C fan-forced). Spray a 20cm (8″) square baking tin with oil or grease it with butter. Line the tin with baking paper or parchment paper with an overhang for easy removal.
- Melt Chocolate and Butter: Place the butter and dark chocolate chips in a heatproof bowl. Microwave in 30-second bursts for about 1 minute 30 seconds total, stirring until the mixture is completely melted and smooth.
- Add Sugar, Vanilla, and Eggs: Stir in the brown sugar and vanilla extract into the melted chocolate mixture. Then, add the lightly beaten eggs and mix well until the batter is smooth and molten.
- Incorporate Dry Ingredients: Add the plain flour, sifted cocoa powder, and a pinch of salt to the wet mixture. Stir until just combined and smooth. Gently fold in the optional chopped dark chocolate chunks if using.
- Pour and Bake: Pour the batter into the prepared baking pan and spread evenly. Bake in the preheated oven for 24 minutes for a really gooey center, 28 minutes for a fudgy but moist brownie (recommended), or 32 minutes for a moist fudge-cake like texture. Check doneness with a toothpick—the center should look moist but not wet.
- Cool and Serve: Let the brownies rest for 10 minutes before lifting them out of the pan, as they are fragile when hot. Allow them to cool at least 20 minutes before slicing. For clean, neat slices, refrigerate for 30 minutes to overnight, but serve at room temperature for perfect fudginess.
Notes
- Use good-quality dark or semi-sweet chocolate for the best flavor and texture.
- Microwave times can vary; melt chocolate gently to avoid burning.
- Line your baking pan with parchment paper with an overhang to easily lift brownies out without breaking.
- Adjust baking time to your preferred level of fudginess.
- Refrigerate before slicing for clean edges but let brownies come back to room temperature before serving for optimal texture.
