Instructions
- Sauté aromatics: Dice the onion and mince the garlic. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft and transparent, about 5 minutes, stirring occasionally.
- Add chicken and liquids: Add the chicken breast, V8 juice, diced tomatoes, drained kidney beans, drained black beans, frozen corn, chili powder, ground cumin, and dried oregano to the pot. Stir well to combine all ingredients evenly.
- Incorporate chipotle peppers: Open the can of chipotle peppers in adobo sauce, remove two peppers, mince them finely, and add to the pot. Also add two spoonfuls of the adobo sauce from the can. Stir everything thoroughly to distribute the flavors.
- Simmer the chili: Bring the mixture to a boil over medium-high heat with the lid on. Once boiling, reduce the heat to low and let it simmer gently with the lid on for 1 hour, allowing all flavors to meld and chicken to cook through.
- Shred chicken and finish: After simmering, carefully remove the chicken breast from the pot. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the pot and stir. Taste the chili and add more chipotle peppers if you want extra heat. Adjust salt to your preference, starting with about one teaspoon and adding more as needed.
