Description

This easy and comforting Carrot, Ginger & Apple Soup combines the natural sweetness of carrots and apples with the warm, spicy notes of ginger and garlic. Perfect for a quick, healthy meal, it’s a smooth, flavorful soup that can be made in just 20 minutes with minimal ingredients.


Ingredients

Vegetables & Fruits

  • 1 lb carrots, ends trimmed and roughly chopped (no need to peel)
  • 2-3 sweet apples, cored and roughly chopped (no need to peel), about 15oz
  • 1-inch piece ginger, roughly chopped
  • 3 cloves garlic, crushed

Spices & Seasonings

  • ½ tsp coriander powder
  • Salt & pepper to taste

Liquids

  • 4 cups vegetable stock or broth (or water, adjust seasoning if using water)


Instructions

  1. Combine Ingredients: Place the roughly chopped carrots, apples, ginger, garlic, and coriander powder into a large pot to start building the soup base.
  2. Add Liquid and Boil: Pour in the vegetable stock or water until the ingredients are covered, then bring the mixture to a boil over medium-high heat.
  3. Simmer: Once boiling, reduce the heat to low, cover the pot, and allow the soup to simmer gently for about 10 minutes, or until the carrots are tender and soft.
  4. Season and Blend: Season the soup with salt and pepper to taste. Using either a jug blender or an immersion blender, blend the soup until it reaches a smooth, creamy consistency.
  5. Reheat and Serve: If the soup has cooled during blending, reheat it gently on the stove. Serve warm in large bowls, optionally accompanied by crusty bread for dipping.

Notes

  • There is no need to peel carrots or apples as their skins add nutrients and texture.
  • If using water instead of vegetable stock, increase seasoning for better flavor.
  • The soup can be reheated and stored in the refrigerator for up to 3 days.
  • For a creamier texture, add a splash of coconut milk or cream before blending.
