This easy and comforting Carrot, Ginger & Apple Soup combines the natural sweetness of carrots and apples with the warm, spicy notes of ginger and garlic. Perfect for a quick, healthy meal, it’s a smooth, flavorful soup that can be made in just 20 minutes with minimal ingredients.
Ingredients
Vegetables & Fruits
- 1 lb carrots, ends trimmed and roughly chopped (no need to peel)
- 2-3 sweet apples, cored and roughly chopped (no need to peel), about 15oz
- 1-inch piece ginger, roughly chopped
- 3 cloves garlic, crushed
Spices & Seasonings
- ½ tsp coriander powder
- Salt & pepper to taste
Liquids
- 4 cups vegetable stock or broth (or water, adjust seasoning if using water)
Instructions
- Combine Ingredients: Place the roughly chopped carrots, apples, ginger, garlic, and coriander powder into a large pot to start building the soup base.
- Add Liquid and Boil: Pour in the vegetable stock or water until the ingredients are covered, then bring the mixture to a boil over medium-high heat.
- Simmer: Once boiling, reduce the heat to low, cover the pot, and allow the soup to simmer gently for about 10 minutes, or until the carrots are tender and soft.
- Season and Blend: Season the soup with salt and pepper to taste. Using either a jug blender or an immersion blender, blend the soup until it reaches a smooth, creamy consistency.
- Reheat and Serve: If the soup has cooled during blending, reheat it gently on the stove. Serve warm in large bowls, optionally accompanied by crusty bread for dipping.
Notes
- There is no need to peel carrots or apples as their skins add nutrients and texture.
- If using water instead of vegetable stock, increase seasoning for better flavor.
- The soup can be reheated and stored in the refrigerator for up to 3 days.
- For a creamier texture, add a splash of coconut milk or cream before blending.
