Ingredients
Filling
- 1 pound boudin sausage
- 8 ounces pepper jack cheese, shredded
- 8 ounces cream cheese, softened and cubed
- ½ cup diced pickled jalapeños
- 1 tablespoon hot sauce
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- 3 green onions, thinly sliced
- Cajun seasoning to taste (optional)
Dough and Glaze
- 2 (8 ounce) packages crescent rolls
- 1 egg, lightly beaten with 1 tablespoon water (for egg wash)
- ½ cup pepper jelly
Instructions
- Prep: Shred the pepper jack cheese and cut the cream cheese into smaller cubes. Thinly slice the green onions. Lightly beat the egg with about 1 tablespoon of water and set aside as an egg wash. Remove the casings from the boudin sausage and break up the filling into a mixing bowl. Preheat your oven to 375°F (190°C). Line a large baking sheet with aluminum foil or parchment paper.
- Mix: Add the shredded pepper jack cheese, cubed cream cheese, diced pickled jalapeños, hot sauce, garlic powder, smoked paprika, and sliced green onions into the bowl with the boudin. Mix everything together well using a wooden spoon or spatula. The mixture will be very thick. Taste and add Cajun seasoning if desired for extra spice.
- Fill: Unroll the crescent rolls and arrange them on the prepared baking sheet in an overlapping oval shape, with the long points of the triangles facing outward to create a ring. Shape the filling into a log and place it around the inside edge of the crescent roll oval. Fold the crescent rolls over the filling to seal it inside, leaving some gaps is fine. Brush the entire surface with the prepared egg wash to help it brown beautifully.
- Bake: Bake the assembled king cake in the preheated oven for 25-30 minutes or until it is golden brown and the filling is hot and bubbly.
- Top: While the king cake is baking, warm the pepper jelly in the microwave until it reaches a liquid consistency. Once the king cake is fully baked, drizzle the warm pepper jelly over the top to glaze it. If desired, sprinkle additional sliced green onions for garnish.
