Ingredients
Blackberry Mixture
- 4 cups fresh blackberries
- 1 cup sugar
- ½ cup water
Batter
- 1 ½ cups all-purpose flour
- ½ cup sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 ½ cups milk, at room temperature
- 1 teaspoon pure vanilla extract
- 6 tablespoons butter
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it is hot and ready when the cobbler is assembled.
- Cook Blackberries: In a medium pot, combine the fresh blackberries, 1 cup sugar, and water. Bring to a boil, then reduce heat to a simmer and cook for 5 to 10 minutes while stirring occasionally, until the mixture has thickened into a syrupy consistency. Remove from heat and set aside.
- Prepare Batter: While the blackberries cook, whisk together the flour, remaining ½ cup sugar, baking powder, and salt in a large bowl. Gradually add milk and vanilla extract, whisking until the batter is smooth and well combined.
- Melt Butter: Place the 6 tablespoons of butter cut into 6 pieces into a 9-by-13-inch glass baking dish. Put the dish in the preheated oven for a couple of minutes until the butter melts. Remove from the oven and tilt the dish so the butter evenly coats the bottom.
- Assemble Cobbler: Slowly pour the batter over the melted butter in the baking dish. Then gently spoon the blackberry mixture evenly over the batter, but do not stir. The berries will sink and partially rise during baking.
- Bake Cobbler: Bake for 30 to 35 minutes until the cobbler is lightly golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool slightly before serving.
- Serve: Serve warm topped with vanilla ice cream or fresh whipped cream for a perfect summer dessert indulgence.
Notes
- Frozen blackberries (approximately 20 ounces, thawed and drained) can be used as a substitute for fresh. Be sure to drain and pat dry to avoid watery batter.
- If you prefer some whole blackberries in the cobbler, simmer only 3 cups of berries and stir in 1 cup of fresh berries after cooking to maintain texture.
- Simmering longer will thicken the blackberry syrup to your liking.
- If blackberries are naturally very sweet, you may reduce the sugar quantity to balance flavor.
- Blackberries will sink through the batter during baking but will partially rise back, forming the characteristic layered look.
- Leftover cobbler can be refrigerated for up to 5 days after cooling completely and stored tightly covered.
- Cobbler also freezes well for up to 3 months, though texture of berries may soften upon thawing.
- To reheat, cover with foil and warm in a 350°F oven for 15–20 minutes or microwave individual servings until heated through.
