Ingredients
Meat Mixture
- 1 pound ground beef, turkey, chicken or any combination
- ½ cup onion, chopped
- ½ pound cooked chopped beef
- 1 cup ketchup
- 3 tablespoons mustard
- 3 tablespoons relish
- ¼ teaspoon salt
- ½ teaspoon oregano
- ¼ teaspoon pepper
Cheese
- 2-3 cups shredded cheese (such as cheddar or a blend)
- 6 cheese slices
Pie Crust
- 1 box refrigerated pie crust (usually contains 2 crusts)
Instructions
- Preheat and Cook Beef: Preheat your oven to 400°F (200°C). In a large skillet, cook the chopped cooked beef until it is almost crisp. Remove and drain on paper towels. Wipe out the skillet.
- Cook Ground Beef and Onions: In the same skillet, cook the ground meat and chopped onions until the meat is no longer pink and onions are tender. Drain any excess fat if necessary.
- Combine Mixture: Add ketchup, mustard, relish, the cooked chopped beef, salt, oregano, pepper, and 2 cups of shredded cheese to the ground meat mixture. Stir well until all ingredients are thoroughly blended.
- Prepare Pie Shell: Open one package of refrigerated pie crust and fit it into a pie plate, ensuring edges overhang slightly to seal later.
- Fill Pie Shell: Pour the prepared meat and cheese mixture into the pie shell evenly.
- Add Cheese Topping: Sprinkle the remaining 1 cup of shredded cheese over the meat filling, then layer the 6 cheese slices on top evenly.
- Top Pie Crust: Cover the pie with the second pie crust. Tuck and wrap the edges underneath the bottom crust and press firmly to seal. Crimp the edges with thumb and forefinger to create a decorative edge.
- Vent the Pie: Using a sharp knife, cut 4 to 5 slits in a star pattern on the top crust to allow steam to escape during baking. Only cut through the dough, not into the filling.
- Bake: Bake at 400°F for 20 minutes. Then remove the pie and cover the edges with aluminum foil to prevent burning. Return to oven and bake for an additional 20 to 30 minutes. Optionally, bake for 5 more minutes to brown the crust further if desired.
- Rest and Serve: Let the pie rest for 10 minutes after baking to set. Slice, serve, and enjoy your cheesy beef pie!
Notes
- Use any combination of ground meats for varied flavor and texture.
- Adjust seasoning (salt, oregano, pepper) to taste or dietary needs.
- Make sure to vent the pie well to prevent sogginess inside.
- Covering the edges of the pie crust with foil prevents over-browning while the center cooks through.
- Letting the pie rest helps the filling set and makes slicing easier.
- Cheese varieties like cheddar, mozzarella, or a blend work well in this recipe.
