Tender chicken breasts seasoned with herbs and cooked to perfection are topped on flatbreads with tangy BBQ sauce, garlic, mozzarella, bell peppers, and red onions, then baked until bubbly and golden. Finished with fresh cilantro and optional Parmesan and red pepper flakes, it combines smoky, savory, and fresh flavors in every bite.


Ingredients

Chicken and Seasonings

  • 2 large chicken breasts (or rotisserie chicken for shortcut)
  • 1 tsp olive oil
  • ½ tsp dried oregano
  • ¼ tsp dried tarragon
  • ¼ tsp salt

Flatbread and Toppings

  • 2 flatbreads or naan
  • ½ cup BBQ sauce
  • 2 garlic cloves, minced
  • 1 cup mozzarella cheese
  • 1 small red bell pepper, chopped
  • ¼ cup red onion, sliced
  • 2 Tbsp cilantro, chopped
  • 2 Tbsp red pepper flakes (optional)
  • 3 Tbsp Parmesan cheese for topping (optional)


Instructions

  1. Prepare and Season Chicken: Pat the chicken breasts dry and cut large pieces in half for even cooking. In a small bowl, mix oregano, tarragon, and salt, then sprinkle both sides of the chicken evenly with this seasoning blend.
  2. Cook Chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 8-10 minutes per side until the internal temperature reaches 165ºF. Remove from pan and let rest for a few minutes, then cut into bite-sized pieces.
  3. Preheat Oven and Prepare Flatbread: Preheat your oven to 375ºF. Place the flatbreads on a large baking sheet. Generously brush the BBQ sauce onto each flatbread, then sprinkle minced garlic evenly over the top. Layer with mozzarella cheese, followed by the cooked chicken, sliced red onions, and chopped red bell peppers.
  4. Bake the Flatbread: Place the baking sheet on the center rack of the oven and bake for 10-15 minutes, or until the flatbread is nicely browned and the cheese is melted and bubbly.
  5. Finish and Serve: Remove the flatbreads from the oven and allow them to cool for a few minutes. Sprinkle chopped cilantro on top and add extra drizzles of BBQ sauce if desired. Optionally, sprinkle with red pepper flakes and Parmesan cheese. Slice with a pizza cutter and serve warm.
