These Easy & Healthy Carrot Cake Muffins are a wholesome twist on a classic favorite, packed with whole wheat flour, naturally sweetened with maple syrup and applesauce, and bursting with warm spices like cinnamon and nutmeg. Finished with a light cream cheese glaze, they make a perfect nutritious breakfast or snack option that’s both delicious and satisfying.


Ingredients

Dry ingredients:

  • 1 ½ cups whole wheat pastry flour or white whole wheat flour (all purpose flour or all purpose gluten-free flour also works!)
  • 1 teaspoon baking soda
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt

Wet ingredients:

  • 1 cup finely shredded carrots (from about 2-3 medium carrots)
  • ½ cup pure maple syrup
  • ⅓ cup natural unsweetened applesauce (or substitute with 1 mashed ripe banana)
  • 1 large egg
  • 2 tablespoons olive oil (or melted coconut oil, walnut oil, or avocado oil)
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened almond milk or coconut milk (any milk will work)

Optional mix-ins:

  • ½ cup unsweetened shredded coconut
  • ½ cup raisins
  • ¼ cup chopped walnuts or pecans

For the glaze:

  • 4 oz light cream cheese, softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 1-2 tablespoons almond milk, to thin glaze


Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners and lightly spray with nonstick cooking spray to prevent sticking. Alternatively, you can skip the liners and generously spray the pan directly.
  2. Mix dry ingredients: In a medium bowl, whisk together the whole wheat pastry flour, baking soda, cinnamon, nutmeg, and salt until fully combined. Set this dry mixture aside.
  3. Combine wet ingredients: In a large bowl, add the finely shredded carrots, pure maple syrup, applesauce, egg, olive oil, and vanilla extract. Whisk these ingredients together until the mixture is smooth and uniform.
  4. Incorporate dry and wet: Slowly add the dry flour mixture and the almond milk into the wet ingredients. Stir gently until just combined to avoid overmixing. If using, fold in the shredded coconut and raisins at this stage.
  5. Fill muffin pan and bake: Evenly divide the batter among the 12 muffin cups. Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow muffins to cool for 10 minutes in the pan, then transfer them to a wire rack to cool completely.
  6. Prepare cream cheese glaze: Once the muffins are completely cool, place the softened cream cheese in a microwave-safe bowl. Microwave on high for 10-20 seconds until slightly warmed and a bit runny. Stir gently, then add powdered sugar, vanilla extract, and 1 tablespoon of almond milk. Stir again and add more milk if needed to achieve a glaze that is pourable but not too runny.
  7. Glaze and garnish muffins: Dip the tops of each muffin into the cream cheese glaze. Place them back on the wire rack to allow glaze to set. Optionally, sprinkle with additional shredded coconut or chopped walnuts/pecans as desired. Serve and enjoy!
