  • 1 lb fresh cherries, pitted and halved
  • 2 tbsp sugar (brown sugar or coconut sugar recommended)

Instructions

  1. Prepare Cherries: Cut 1 lb of fresh cherries in half, remove all pits and stems using a cherry pitter or your hands for easier cooking and better texture.
  2. Combine Ingredients: Place the cherries and 2 tablespoons of sugar into a medium pot, then cover the pot and bring the mixture to a boil over medium heat.
  3. Simmer Until Broken Down: Reduce the heat so the cherries are gently bubbling, and cook for 12 to 14 minutes, stirring occasionally, until the cherries break down and the mixture thickens.
  4. Add Flavorings: Remove the pot from heat and stir in ½ teaspoon of almond extract and 1 teaspoon of kirsch liqueur if using, to enhance the flavor profile.
  5. Cool and Store: Allow the compote to cool to room temperature, then transfer it to a glass jar with a lid and store in the refrigerator. The compote will thicken slightly as it cools and can be kept refrigerated until needed.
