Ingredients

Chocolate Mixture

  • 11 oz white chocolate baking chips
  • 2 tablespoons powdered sugar (confectioner’s sugar)
  • ¾ cup creamy peanut butter

Nests

  • 8 oz chow mein noodles (crispy noodles)
  • Nonstick cooking spray

Topping

  • ~36 Cadbury Easter candy-coated mini chocolate eggs


Instructions

  1. Melt the White Chocolate: In a large microwave-safe bowl, microwave the white chocolate chips for about 1 minute, stopping and stirring every 15 seconds to prevent burning until fully melted and smooth.
  2. Mix in Powdered Sugar and Peanut Butter: Add the powdered sugar and creamy peanut butter to the melted white chocolate. Spray the measuring cup with nonstick spray before adding peanut butter to make it easier to remove. Stir everything together until the mixture is smooth and well combined.
  3. Incorporate Chow Mein Noodles: Gently fold in the chow mein noodles using a silicone spatula, carefully mixing to coat the noodles evenly without breaking them.
  4. Prepare Muffin Tin: Spray a standard 12-cup muffin tin with nonstick cooking spray, then wipe with a paper towel to remove excess oil and ensure the nests don’t become too greasy.
  5. Shape the Nests: Spray a rounded tablespoon with cooking spray. Scoop the chow mein mixture and place it into each muffin cup. Press down in the center of each scoop to create a dent resembling a bird’s nest. Repeat until all cups are filled, spraying the spoon as needed to prevent sticking.
  6. Add the Chocolate Egg Topping: Place about three mini Cadbury candy-coated chocolate eggs in the center of each nest, pressing them slightly into the dent.
  7. Chill and Set: Refrigerate the muffin tin for 20 minutes or until the nests are solid and set. Once firm, carefully remove the nests from the tins. If any are stuck, use a fork to gently lift them out. Serve and enjoy!
