  • 4 cups unsweetened medium coconut flakes

Colored Coconut Flakes

  • 2 cups unsweetened medium coconut flakes, divided into 3 portions
  • Liquid food colouring (various colors, as desired)


Instructions

  1. Prepare the Coconut Mixture: In a large bowl, combine the sweetened condensed milk and melted salted butter. Add vanilla extract, almond extract, and powdered sugar, then whisk everything together until well blended.
  2. Mix in Coconut Flakes and Chill: Add 4 cups of the unsweetened medium coconut flakes to the mixture. Use a large spoon to stir until the coconut is thoroughly incorporated. Cover the bowl and refrigerate for at least 15 minutes, or up to 2 days to allow the mixture to firm up.
  3. Color the Coconut Flakes: Divide the remaining 2 cups of coconut flakes into three separate small bowls. Add 1 to 2 drops of liquid food colouring to each bowl and mix thoroughly until the color is evenly distributed. A stand mixer with paddle attachment can be used for easier mixing.
  4. Shape and Coat the Coconut Balls: Remove the chilled coconut mixture from the refrigerator. Scoop out approximately 1.5 tablespoons of mixture and roll it into a ball. Then roll each ball into the colored coconut flakes to coat completely. Place each coated ball onto a parchment-lined cookie sheet.
  5. Final Chill: Refrigerate the coated coconut tails for at least one hour to set before serving. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
