- Drain and prepare spinach: Drain the 10 oz thawed frozen spinach thoroughly by wringing out excess moisture using a mesh cloth or kitchen towel to prevent soggy rolls.
- Mix the filling: Transfer the well-drained spinach to a medium mixing bowl. Add ½ cup shredded sharp cheddar cheese, ½ cup shredded low-moisture mozzarella cheese, 2-3 tablespoons grated Parmesan, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, and ¼ teaspoon salt. Mix everything until well combined.
- Roll out puff pastry: On a lightly floured surface, roll out the two thawed puff pastry sheets. Spread half of the spinach-cheese mixture evenly over each pastry sheet, leaving a ½-inch border around the edges.
- Form the rolls: Starting from the long side, roll each pastry tightly into a log. Using a sharp knife, slice each log into 1 to 1¼ inch rounds to create pinwheels.
- Chill the pinwheels: Place the cut pinwheels on a parchment-lined baking sheet and refrigerate for 15 to 20 minutes to help them hold their shape when baking.
